Invoice Payment Tracking Without Losing the Audit Trail

Separate the invoice from the payment
An invoice states what is owed. A payment record states what was received, when and by which method. Keeping these records separate lets you preserve the original document while calculating the remaining balance. Editing an invoice to match a partial payment destroys that distinction and makes later review harder.
Record the gross amount received in the invoice currency, the payment date and a short reference such as a bank transfer identifier. Do not store full card or bank credentials in notes.
Handle partial and corrected payments
For a partial payment, leave the invoice total intact and subtract the recorded payment from the open balance. If several installments arrive, add each as a separate event. This makes the timeline understandable to the customer and to anyone reconciling records later.

Keep currencies honest
Do not add USD, EUR and TRY balances into one unlabeled number. Review open totals by currency and convert only when you have a documented exchange-rate method and a genuine reporting need.
